Ingredients
4 chicken breasts, boneless and skinless
1 cup of cooked rice (I use instant rice)
1 bag of frozen mixed vegetables (carrots, peas, corn, and green beans)
In a bowl, coat the chicken breasts with 1 tablespoon of olive oil and 1 teaspoon of sesame oil. Add salt and pepper to taste. Let it sit for about 5 minutes to allow the flavors to infuse and you cook the rice.
In a large pan or wok, Add the marinated chicken breasts and cook for about 3-4 minutes on each side, or until they are cooked through and no longer pink in the center. Add the ¼ cup of teriyaki sauce and cook until the sauce thickens and the chicken is nicely glazed. Remove the chicken from the pan and set aside.
In the same pan, add the remaining olive oil and sesame oil and heat over medium heat. Add the lightly beaten eggs. Add salt and pepper to taste, and scramble. Once cooked, slide the eggs to one side of the pan.
Add the cooked rice, to the eggs and salt and pepper to taste. Add the remaining teriyaki and soy sauce and mixed to combine. Add in the frozen mixed veggies and heat through.
Garnish with sliced green onions and sesame seeds, if desired.
