Preheat the oven to 375°F. Grease a baking dish and set it aside.
Cut each zucchini lengthwise and scoop out the flesh, leaving about 1/4 inch thick zucchini boats. Reserve the scooped-out flesh and freeze for a soup.
In a large bowl, combine the ground beef, cooked white rice, shallots, garlic, and eggs. Season with salt and pepper to taste. Mix until well incorporated.
Add the meat mixture to a pipping bag. You can use a zip top bag or spoon.
Add the beef and rice mixture into the hollowed-out zucchini boats, dividing it evenly among them. Place the stuffed zucchini boats in the prepared baking dish.
In a small bowl, mix the tomato soup with 1 ½ cans of water until well combined. Add salt and pepper to taste. Pour the tomato soup mixture evenly over the stuffed zucchini boats.
Sprinkle grated Parmesan cheese over the top of each zucchini boat.
Cover the baking dish with foil and bake in the preheated oven for 25 minutes.
Remove the foil and bake for an additional 10-15 minutes, or until the zucchini is tender and the cheese is lightly golden.
Garnish with fresh parsley, if desired, and serve the stuffed zucchini boats hot with the tomato soup gravy.
